Recipe Friday – Summer Glow Bowl

One of our favorite “good for you skin” greens is watercress. This delicate wild green has a peppery flavor and can be difficult to find at your local market because it sells out so quickly! It took us quite a few places before we finally found it, but the benefits of watercress for you skin, is well worth the trouble. We were inspired to make this Glow Bowl salad, originally posted by Feasting At Home, which incorporates watercress with skin healing ingredients such as fresh blueberries, oranges, avocados, and walnuts. We used mung beans as our grain of choice for its superfood benefits, but any grain can be substituted.

Watercress benefits:

Watercress is healing to your skin when used both  internally and externally. Since this salad is eaten, the internal benefits will be highlighted here. Watercress is a natural anti-inflammatory and purifies your blood from within and keeps you free from skin infections. It contains an abundance of Vitamin A and Vitamin C, which are powerful antioxidants and combat the free radicals present in the skin. Therefore, watercress helps to keep fine lines and wrinkles away and helps to safeguard the skin from the harmful damages triggered by excessive exposure to the sun. The use of watercress in the food also helps to protect the your skin from cancer.





  • 1 avocado
  • 2 cups blueberry
  • 1 Orange 
  • 1 red onion
  • 1 fennel bulb 
  • 1 bunch watercress 
  • 1 cup mung beans or other grain
  • 1/4 cup walnuts 


  • 1/2 cup of orange juice
  • 1/4 olive oil
  • 2 table spoons white vinegar
  • 1 tablespoon honey 
  • 1/4 finely chopped red onion
  • Dash of salt 


Rinse mung beans in cold water. Bring 3 cups water & 1 cup mung beans to boil turn on medium heat for about 20-30 minutes drain extra water & chill. Thinly slice fennel & red onion. Add all together makes 4 servings.
