It officially feels like summer now, with the warm weather and kids out and about all over the place (when normally they would be in school). What is a better way to celebrate summer than Watermelon Lemonade!
It doesn’t take a lot of convincing for most people to enjoy some watermelon. Who doesn’t love to eat the sweet fleshy melon. However, did you know that watermelon is amazingly good for you too? The health benefits include:
1. High in lycopene for heart, skin and cancer prevention.
2. Contains citrulline, which improves blood flow.
3. Interferes with fat accumulation in cells, so helps with weight loss.
4. Anti-inflammatory benefits.
5. Great for kidney health and helps to flush out ammonia, uric acid and prevent kidney stones.
4 cups watermelon chopped into cubes
8 oz of fresh squeezed lemon juice (about 4-5 large lemons)
2 cups of water
1/2 cup of basil simple syrup (recipe below)
basil simple syrup directions:
Combine 1 cup of raw sugar, 1/2 cup of water, and 1/2 cup of washed basil leaves in a small saucepan.
Bring to a simmer on medium heat, stirring occasionally, until sugar has dissolved. Remove from heat. Let the syrup cool completely, then pour through a fine sieve into a jar or resealable container.
watermelon lemonade with basil simple syrup directions:
puree the watermelon in a blender, then pour through a fine mesh strainer if you don’t like watermelon pulp. (we usually skip this step because we like it frothy with the pulp.) combine the remaining ingredients and chill for at least a couple of hours.
