Have you tried cooking with coconut flour? It’s made by drying and finely grinding the meat of a coconut, so it’s high in fiber and protein. It is naturally gluten free and a good alternative for those that have wheat allergies. However, it doesn’t act like regular flour when you are baking and it does take some trial error when substituting for regular flour. We have been experimenting and this recipe for Coconut Flour Pancakes came out well.
Coconut Flour Pancakes
2 tablespoons virgin coconut oil or butter, melted
2 tablespoons coconut milk
1/8 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons sifted coconut flour
- Mix together eggs, oil, coconut milk, sugar and salt.
- Combine coconut flour and baking powder and thoroughly mix into batter.
- Heat 1 tablespoon of coconut oil in a fry pan.
- Spoon batter onto hot pan making pancakes about 7- 8cm in diameter. Batter will be thick but will flatten out when cooking. Makes approx 8 pancakes
We ate our pancakes with fresh berries and bananas. Yummy!
